Chicken Broth for Recovery and Energy

This has to be the best thing anyone can make for you when you don't feel well.

 

My favourite recipe is as follows...

 

3-4lbs of bones or a chicken carcass (uncooked - butchers often have them for very little money)  If you can get organic, all the better.

 

Place the bones or carcass in a deep pan and cover with water plus 1/2 cup of cider vinegarand leave for at least leave 3-4 hours.  This helps the bones secrete the minerals.

 

Add 3 celery sticks just cut in half along with 3 halved carrots and 3 onions quartered.

 

Bring it all to the boil and skim of the scum.

 

Now either transfer to a slow cooker on a low heat and let it simmer for 24hrs, or simmer on the stove for as long as is safe to leave it.

 

Towards the end, add a handful of chopped parsley and cook for 10mins, before adding sea or rock salt to taste.

 

Remove all the veggie and discard and drink the broth.

 

One of the most energising foods I've ever had the pleasure of eating.

 

Next time you know someone is ill, take them this and skip the flowers, and hopefully they will return the good deed.
